The tenderloin lives up to its name as one of the most tender cuts of beef there is!  I love it any way you cook it. When we get the chance to enjoy it as a 1-2 lb roast I cover it in a herb butter and roast it in a dutch over till perfectly pink inside.  As medallion steak sized pieces I love to fry them just enough on the outside to keep the flavor and tenderness on the inside! You just can't go wrong.

We have paused shipping for the summer. You can still get our pasture raised and finished meats by signing up for our SLR Farm Club (only orders that will be shipped), visiting the Cutbank Farmer's Market, or doing a ranch pick up. We will be back to shipping in September.
