The tender loin lives up to its name as one of the most tender cuts of beef there is!  I love it any way you cook it. When we get the chance to enjoy it as a 1-2 lb roast I cover it in a herb butter and roast it in a dutch over till perfectly pink inside.  As medallion steak sized pieces I love to fry them just enough on the outside to keep the flavor and tenderness on the inside! You just can't go wrong.
