Ingredients:

  • 4 cups rice
  • 4 eggs
  • 3 tbsp sesame seeds
  • BEEF AND MARINADE
    • Thinly sliced beef or ground beef
    • 1/4 Asian pear/pear/apple
    • 3 cloves of garlic
    • 1 TBSP Coconut Aminos/soy Sauce
    • 1 tbsp honey/brown sugar
    • 2 tsp sesame oil
  • vegetables
    • 2 carrots - julian
    • 2 zucchini - Julian
    • 1 bunch spinach
    • 8 dried shitake mushrooms
    • 4 cups bean sprouts
    • 2 tsp garlic
    • 1 tbsp avocado oil/veggie oil
    • 1/2 tsp salt
    • 2 tsp coconut aminos/soy sauce
    • 1/4 tsp fish sauce
    • 1/4 tsp white sugar/honey
    • sesame oil
    • kimchi
  • Bibimbap Sauce
    • 4 tbsp gochujang paste
    • 2 tbsp mirin/red wine
    • 2 tbsp rice vinegar
    • 3 tsp white sugar/honey
    • 1 clove of garlic
    • 2-3 tsp sesame oil

Preparation:

  • The day before make the marinade and mix with beef to marinate over night. You can marinate before had too if you don’t have time, at least 30 min before cooking for good enough flavor.
  • Mix up all the ingredients for the Bibimbap sauce
  • Soak Sitake mushrooms up to 30 min before use
  • begin cooking rice 20-30 min before

Instructions:

  • warm up two skillets if possible and a small pot of water
  • in large skillet cook the meat.
  • let marinade drain of as much as possible and cook and stir for 3-4 min. place somewhere and keep warm till you assemble bowls.
  • using both skillets start with shiitake mushrooms in one and carrots in the other.
  • add some avocado/sesame oil and mushrooms to first skillet and cook/stir for 2 min. add a splash of coconut aminos, a pinch of sugar, a bit of garlic stir for another 1 min and remove.
  • in other skillet add some oil and carrots, saute till tender (5-8 min). remove.
  • do the same with the zucchini.
  • add more oil if needed and add spinach. saute till it wilts. add some garlic and salt. remove.
  • simmer bean sprouts for 5 min or steam for 4 min till floppy
  • place all the cooked veggies into small Tupperware till its time to assemble.
  • Lastly assemble to bowls: place a cup of rice on the bottom, then layer veggies and meat around the top. Fry an egg in remaining oil.
  • drizzle some bibimbap sauce over the top and eat!
